My favorite place for dive certification is Turkoise. There are a wide range of diving options there too, once you are certified. Plus, they have 3D maps of the reefs--which I haven't seen anywhere else. I hear diving in Columbus Isle is good too...but I've never been there.

I'm with you on not wanting to hang out with someone else's kids (they're only cute when they're family :) Columbus Isle in the Bahamas allows kids, but doesn't get many families because they don't offer kids programs. Mostly adults are there--either for relaxation, romance or diving and snorkeling. The few kids that are there are teens--and want to do their own thing.
The Brazilian resorts are also pretty cool. Yes, there are families, but somehow Latin Americans keep the adult vibe.

If you are feeling adventurous, Club Med is the perfect way to explore a country that might feel less accessible as a woman traveling alone. I recently went to Club Med Le Riad in Morroco and the staff gave me very helpful tips--so helpful that I went and explored Marrakech by myself with total confidence. If you want something closer to home, Turkoise is always great.

I think the drinking age in Mexico is 18. I know kids at Club Med wear different wrist bands if they are under 18 to differentiate them from the adults...
