3 Bean Salad with a Balsamic Vinaigrette
Serving Size: 5
1/4 cup white beans
1/4 cup navy beans
1/4 cup black beans
3/4 cup salad shrimp — cooked and drained
1/2 whole red onions — diced
1 whole green pepper — diced
5 leaves fresh basil
1 whole chili peppers — minced fine
1 tablespoon olive oil
1 tablespoon balsamic vinegar
salt and white pepper
3 bay leaves
3 whole carrots
3 whole onions
3 piece celery
Soak the beans in water the night before.
Boil the beans in separate, small saucepots with salted boiling water. Add 1 bay leaf,
1 carrot, 1 onion, and 1 celery stalk to each saucepot. Cook for approximately 1 hour or until tender.
Mix the oil, vinegar, salt, and pepper together and keep aside.
Mix all the other ingredients together in a medium size bowl.
Per Serving: 178 Calories; 3g Fat; 13g Protein; 25g Carbohydrate; 7g Dietary Fiber
