White Chocolate Bread Recipe

Club Med's most famous bread. We don't want to break your diet, but indulgence in small portions in will keep you from binges.
8 cups flour
1 teaspoon yeast
1 tablespoon wheat gluten
2 teaspoons salt
3 1/2 cups water
2 3/4 cups white chocolate chips
1. Place flour, yeast and gluten in a small bowl. Mix on medium-low or first speed for 1 minute. Add water and mix for another 2 minutes. Add salt and continue to mix for another 8-10 minutes on medium or second speed.
2. Add chips and mix for 1-2 minutes or until the chips are well distributed throughout the dough.
3. Take dough out of bowl and lightly knead into a ball. Let rest for 15-20 minutes
Preheat the oven to 450˚F.
4. Divide dough into 5 equal portions and knead into the desired form. Let the loaves proof for about 30-45 minutes, depending on the heat and humidity of the area.
5. Place uncooked loaves on a baking pan lined with parchment paper and bake for approximately 20 minutes.
6. Remove from oven and let stand for 15 minutes.
Enjoy—and try to save some for the next day. White chocolate bread makes great toast!

Melissa Stephenson says We just got back from Punta Cana and let me tell you that I ate it for breakfast, lunch, and dinner! I ordered 6 loaves to bring home and my mom says there has to be drugs in it! Lol! My husband and daughter laughed at me every time we sat down to eat bc I was telling them to get some so it would not look like I was a crazy woman with a plate FULL of bread! I was even taking some to our room for snacking and hiding it bc I was worried the cleaning lady would throw it away! Christine says I just got back from Club Med. I bought 3 loaves of bread b/c they said if you did they would give you the recipe but they didn't. I was told by the baker there that the bootlegged recipe online wasn't quite correct.
I made this last night and she's right, it's not quite correct. The taste is right on but the bread is WAY too dense (you can even see that in this photo). The bread they make is very light -- the loaf feels like air.

Cherie says maybe knead the bread more and let rest then punch down and knead again and let it set to rise again Im going to try the bread today let you know how it turns out but since you said it was dense so maybe more kneading and rising will help with the density , will post later how it worked out Posted January 2, 2012, 3:10 pm
